Cooking Measurement Equivalents

A fluid ounce is different from an ounce of weight.  Solid ingredients can be measured by weight or by volume.  It is common to find liquid (volume) measures used for both dry and liquid ingredients.  Don't worry about this inconsistency.  Use the measure that is specified in your recipe.  Most older United States recipes use volume measurements.   Take flour as an example, a weight of 4 1/4 ounces is preferable to a cup, but most of the time you will see a cup of flour.  In this tradition, if your recipe calls for "Packed, Level, Heaping or Sifted", consult the dictionary or see   Altering Volume Measurements.    Fruits and vegetables are commonly sold as dry measures, however, a liquid pint is not the same as a dry pint (1 liquid = 1.1636 dry), which is not the same as a British pint.  See Additional British Conversions of Note   An Australian Tablespoon is 20 milliliters, a teapsoon larger than its US and British counterparts.

To find TEASPOONS IN CUPS, find the intersection of the teaspoon column and the 1 cup row.

To find MILLILITERS IN CUPS, find the intersection of the milliliters column and the 1 cup row (237 is rounded up from the actual value of 236.588237).

To find the CUP EQUIVLANECE OF 100 MILLILITERS (100 milliliters in cups), find the intersection of the cup column and the 1 milliliters row and multiply times 100.  Example .0042 * 100 = .42

Altering Volume Measurements

Sifted

Sift with a strainer or sifter before measuring. To un compact the ingredient.

Heaping

More than rounded, less than the next unit of measure.

Rounded

Allow your ingredient to rise above the line on the cup or its rim naturally, into a soft, rounded shape.

Even or Level

Measure precisely.

Lightly Packed

Agitate the measuring cup so that the contents settle and there are no are no air pockets.

Firmly Packed

Press the ingredient into the measuring cup.
